Hong Kong breakfast
Pan fried salmon, sweet potato fries and mint, cucumber salad.
Marinated salmon in garlic, olive oil, s/p and Melinda's ghost pepper sauce. Pan fried. Served with lemon.
Sweet potato fries with olive oil, s/p. thin cut, dry baked for 15/turn, 10 other side.
Cucumber salted un colander and drained for 30 min, red onion soaked for at least 10 min. Add oil, mint, sugar, white wine vinegar and pepper. Sit in fridge at least 30 min.
Add fresh arugula from the garden!
Keep fries separate from salad and fish, as they loose the nice crunchiness if in too close contact!

What else can go in the oven salad
Leftovers rock!
This salad was an experiment went right.. Except for the beets do not try to broil beets...
Raw stuff:
Spinach
Grapes
Pear
Dried figs
Manchengo
Red onion
Lemon juice
Broiled stuff:
Brussels
Red onion
(Beet - don't do this part)
Pepper and olive oil
Yum!
Next time: try figs in oven? Add pine nuts?

Volcanic open face egg sandwich
Fried egg over toasted bread, topped with Parmesan, avocado, tomato/ red pepper/ garlic salsa, hot sauce and shredded lettuce.

Apricot blueberry muffin
More like cobbler since I overloaded with fruit but very good!
6 fresh apricots pitted and diced
1 cup fresh blueberries
1 1/2 cups rice flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoon ground cinnamon
1/4 tsp ground nutmeg
6 tablespoons olive oil
1/2 cup soy milk
2 large egg
Preparation
Preheat oven to 375°
Combine flour baking powder soda salt cinnamon and nutmeg in a large bowl.
Beat eggs. Add milk olive oil and sugar. Beat well.
Gently fold together wet mix with dry mix then fold in fruit (and nuts if using them).
Distribute batter evenly in a greased 12 cup muffin tin.
Bake for 15 minutes.
Changes: probably would add vanilla ext.

Spring '13 pickles
Three different varieties, one bottled in a huge jar.
1. Apple cider vinegar, fine grain salt, pickling cucumbers, garlic, red pepper flakes, mustard seed (lots) and picking spices.

Results:
1. To be determined.
2. Just ok.Balance of sweet and spicy not right, brown sugar and apple cider meh for sweet. Ended up being more spicy.
3. Taste pretty good. Smells weird, like rotten eggs.
Smokey dunkel
As batch #12, this is a German style dark lager with beachwood smoked grains.
This beer took two months of cold fermenting, as well as two weeks of bottle conditioning.
Slightly less carbonated then desired, it turned out amazing. Jackie says its one of my top favorites!

Asian inspired borsch
Hippie soup of sweet potato(2), beets (1), Swiss chard, garbanzo, chicken stock, coconut milk, habanero, lime, fish oil, garlic, ginger and olive oil.
Changes:
-Swiss chard in last to keep fresh
-maybe more potatoes to make broth more hearty
-could def use some pork sausages!
-overall fusion and taste good

Cinco de mayo!
Grilled white fish tacos, topped with oranges, avocados, lettuce, lime salsa fresca and amazing sauce! Rice and beans on the side.

-maybe grill fish in tin foil to retain moisture
-maybe better as a bowl of rice and beans instead of taco.
